Recipe: Bacon & Vegetable Quiche


I've had a bit of interest in the Bacon & Vegetable self crusting quiche since I posted a pic of it a few weeks ago. The recipe I use is based on one my friend Kath gave me many years ago.

You can make one quiche from this recipe or as I do sometimes, use muffin tins to make small individual ones.

Ingredients:

2 zucchini, grated.
1 carrot, grated.
1 onion, finely chopped.
4 rasher bacon, chopped.
1 cup sweetcorn, can be frozen.
1 cup tasty cheese, grated
1 cup self raising flour.
1/2 cup oil.
5 eggs, lightly beaten.
extra grated cheese for the top.

You can also add extra vegetables, broccoli, mushrooms, capsicum, tomato, or even left over cooked vegetables like potato or kumara (sweet potato).

You could swap the bacon for ham or even cooked chicken.

Preheat your oven to 170 C
Grease a large dish suitable for the oven.
In a large bowl add all your grated and chopped vegetables, cheese, oil, flour and eggs.
Stir well to combine, season with salt and pepper and spoon into dish.
Top with extra cheese.
Bake in oven for 35-50 minutes or until golden on the top.
Cool slightly before cutting into portions.
