The week that was

A few random snaps from last week:

Gorgeous flowers from my Mum's garden

Our very first ripe tomato of summer - didn't last long on the window sill, Glenn had it sliced and into a sandwich super quick!

This summer I've started drinking ice tea - I'm not usually a tea drinker, preferring coffee, but this has become a favourite cool down drink after work, trying out lots of different flavours.  These are pretty yum too.

Hannah's first day back at school last Monday went really well, this year she is in quite a large class, her teacher is lovely, and many of the children Hannah started school with back in 2013 are in her class again including her best friend.

Being back school means the start again of after school activities - Pippins, tennis and swimming lessons this term meaning some nights we are later getting home and getting on with dinner and homework etc.  To make things less stressful, I've prepared a couple of easy salads to go along with whatever Glenn cooks on the bbq over the next few nights.

This creamy pasta recipe looked yum, you can add any extras, celery, capsicums, etc, I added some pineapple pieces and it was delicious.

Lettuce salad with home grown apple cucumber, tomatoes, radish, carrot, and some brie cheese.

Glenn's favourite egg salad, very easy to make, free range eggs, spring onions, grated carrot and some salad dressing or mayo.

Another salad I've made a lot this summer is a raw beetroot and carrot salad from the Revive Cafe book, I found the recipe online here, I'm not really a beetroot fan but I love this salad.

Anyone got any other yummy salad recipes to recommend?

You might like to try this beetroot salad (we call them beets up here) from the New York Times. I was pretty skeptical about a raw beet salad, but it was very nice. I love living in the warmth vicariously through my southern hemisphere friends!
