Recipes from Last Post

I've had several requests for the recipes I used for the muffins and tea loaf so here you go - enjoy!

Pineapple & Pear Muffins

For these I use a basic muffin recipe. This is a good all round muffin that is nice just as it is, or you can experiment with the recipe by adding anything you like.

1 egg
1 c milk
2 tablespoons of oil (I use canola oil)
1/4 c sugar
4 teaspoons of baking powder
2 c all purpose flour

Lightly oil a muffin tin and preheat the oven to approx. 190 degree C/350 F. This recipe makes 12 muffins.
Put the first four ingredients into a bowl and mix well, then add the remaining ingredients and blend until just mixed.
Two-thirds fill the muffin tins and bake for 15-20 minutes.

For the pineapple and pear muffins, I used 3/4 tin of crushed pineapple (juice drained off) and 1/2 tin of canned pears, diced up into small pieces.

Other variations of this muffin I like to make are: banana and chocolate chip, strawberry, or any other fruit.

Tea Loaf

1 cup cold tea (or apple juice)
1 cup brown sugar
1 cup mixed dried fruit ( just whatever you have or fancy)
2 cups of self raising flour.

Soak the first three ingredients for about an hour.
Mix in flour.
Bake at 160 degrees celsius until cooked(about 45 mins, but check after 30 mins).

You can sprinkle silvered almonds on the top.

I like to add a mix of sultanas or raisins, dried cranberries and apricots.
